Ingredients
  

  • 1 lb pasta (penne or rigatoni)
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cubed
  • 1/2 lb Italian sausage, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Optional: 1 bell pepper, sliced; fresh basil or parsley for garnish

Instructions
 

  • Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside, reserving about a cup of pasta water.
  • In a large skillet, heat olive oil over medium heat. Add the cubed chicken, seasoning with a pinch of salt and pepper, and cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sausage slices and cook until browned. Add the diced onion and garlic, and sauté for 2-3 minutes until fragrant and softened. If you’re adding bell pepper, add it now and cook until it’s tender.
  • Lower the heat and pour in the heavy cream, stirring to combine with the sausage and vegetables. Allow the cream to simmer for a few minutes until it thickens slightly. Gradually add the Parmesan cheese, stirring until melted and creamy.
  • Add the cooked pasta, chicken, and a splash of pasta water to the skillet. Toss everything together until the pasta is well-coated with the sauce. Adjust the seasoning with salt and pepper as needed.
  • Garnish with fresh basil or parsley, and a sprinkle of extra Parmesan if desired. Serve warm and enjoy!
