Heat a large pot over medium heat.
Add the ground beef and cook until browned, breaking it apart with a spoon (about 5–6 minutes).
Drain excess fat if needed.
Add the diced onion and garlic to the beef.
Cook for 3–4 minutes until softened.
Stir in the carrots, potatoes, and celery.
Cook for another 2–3 minutes.
Pour in the diced tomatoes and beef broth.
Add Italian seasoning, salt, and black pepper.
Bring to a boil, then reduce heat to a simmer.
Cover and let the soup simmer for 25–30 minutes, until the vegetables are tender.
Stir in the green beans, corn, and peas.
Simmer for another 5 minutes.
Taste and adjust seasoning if needed.
Ladle into bowls and enjoy!
