  • A citrus zester or fine grater

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 lemons (juice and zest)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: Fresh parsley for garnish

Instructions
 

  • Pat the chicken breasts dry with a paper towel. Season both sides with salt and pepper.
  • In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, and herbs. Pour the mixture over the chicken and let it marinate for 15–30 minutes.
  • Heat a skillet over medium heat. Cook the chicken for 5–6 minutes per side until golden brown and cooked through (165°F internal temperature).
  • Preheat the oven to 375°F. Place the chicken in a baking dish, pour the marinade over it, and bake for 20–25 minutes.
  • Sprinkle fresh parsley over the chicken before serving.
